Roasted  beef with rosemary leaves, roasted tomatoes, and onions

Ingredients:

  • 2 slices  of beef (medium size)
  • Approx. 10 rosemary leaves
  • 1 tbsp of ground oregano
  • 1 tbsp of ground thyme
  • 1 tsp of ground black pepper
  • ½ cup fresh sweet basil leaves (thinly sliced)
  • 2 pinches of brown sugar
  • 3 tbsp of butter
  • 2 tbsp of olive oil
  • 1 tbsp of sesame oil
  • 1 tbsp of sesame seeds
  • ¼ cup of minced garlic
  • 2 cups of cooked rice
  • 4 cups of water
  • 1 cup of cherry tomatoes
  • salt and pepper to taste

Preparation:

→In a crock pot pour water, add beef and cook it for 2hrs on high/medium temp. or until the meat is tender. Then drain the beef.

→In a separate pan/wok, pour the olive. Add the sesame oil, butter, rosemary, oregano, thyme, black pepper, basil leaves, sesame seeds and tomatoes. Then add the cooked beef and braised together for 2min. Remove the tomatoes and set aside. Continue roasting for 5-10 minutes, then remove it and transfer to another separate plate.

→With the same pan/wok, add butter and garlic. Saute until it caramelized. Then add cooked rice, salt, and pepper to taste and cook for a further 3-5min.

→In a separate plate, put a cup of rice, some slices of roasted beef and the roasted tomatoes. Drizzle with some buttery sauce left from roasted beef. Enjoy.
